Now that it's fall it's time for squashes!!! I don't eat wheat so when I want pasta I make spaghetti squash. It has such a nice subtle flavor, goes well with every type of sauce, and doesn't leave you feeling bloated like regular pasta. I just thought I'd post this as a PSA because it seems that most people have never heard of it.
For those who have never cooked it, it's super easy. You cut the squash in half, place it flesh side down on a baking sheet with a tiny bit of water and bake until tender. Next you scoop out all the seeds and then take a fork to the flesh and it will come out like spaghetti noodles. Add any type of sauce you like as if it were pasta and voila! It's ready!
