Spicy sundried tomato paste
Makes about 16 servings
Ingredients
1 tsp cayenne pepper
½ tsp salt
1 tsp fennel seeds
½ tsp ground pepper
1 jar (7-10 oz) sun-dried tomatoes in oil
Directions
Using a spice grinder or a mortar and pestle, grind the cayenne, salt, fennel seeds, and ground pepper to a fine powder consistency.
Drain the sundried tomatoes, reserving the oil.
Add the tomatoes and the spices to a stick blender container (you could also use a small food processor). Add approximately 2 tablespoons of the reserved oil and blend until smooth, stopping occasionally to loosen the packed tomatoes from the bottom of the container, if necessary. You may need to stir in more oil to reach your desired consistency.
