This is a rather straightforward recipe but produces a pretty result. I think the bread is best served warm with a soft cheese such as camembert to go with it.

Bread dough made from 300g flour and 5g of dried yeast
A handful of cooked spinach, roughly chopped
3 large onions, sliced and cooked slowly in butter and oil until caramelised

Method
- Roll the risen dough into a rectangle.
- Thoroughly squeeze the spinach to remove as much liquid as possible.
- Spread the spinach and onions over the bread leaving a one inch perimeter.
- Roll the dough onto itself lengthwise (as you would a Swiss Roll).
- Place seam side down on a baking tray and allow to prove for 20 minutes
- Bake at 180 C for 25 minutes.
