Spinach with Sumac
(Spanekh wa Sumac)

Serves:
4 as part of a mezze

Ingredients:

1 small red onion, finely diced
Oil, for frying
350 g baby spinach
1 tbsp sumac
Salt and pepper, to taste
Pomegranate seeds, to serve (optional)
Plain yoghurt and flatbread, to serve

Method:

On a very low heat, fry the onion in a little olive oil for 20-30 minutes until softened and almost caramelised. Add the spinach leaves and cook them until wilted. Turn off the heat, then sprinkle on the sumac, a squeeze of lemon, salt and pepper, and stir. Sprinkle over the pomegranate seeds, if using.

Serve with yoghurt and bread.

I have sumac here, and spinach growing. I'll save this and run it past the wife.
