STRAWBERRY CREAM BUDINI
Serves 6
Ingredients
8oz mascarpone cheese
6 TB sweet Marsala, divided
3 TB heavy whipping cream
3 TB sugar, divided
3 cups sliced hulled strawberries (about 15oz)
2-1/4 cups coarsely crumbled amaretti cookies (about 4-1/2oz)
Directions
1. In a bowl, add the mascarpone, 3 TB Marsala, cream, and 2 TB sugar. Stir gently until well blended. Cover with plastic wrap and refrigerate 30 minutes.
2. In another bowl, add the strawberries, remaining Marsala and sugar, and toss lightly to coat. Cover with plastic wrap and refrigerate for 30 minutes.
3. Remove mascarpone and berry mixtures from refrigerator. Place 2 TB crumbled cookies in 6 parfait glasses. Divide strawberry mixture with juices among dishes. Top berries with mascarpone, and top with remaining cookie crumbs. Cover and chill for at least 30 minutes, up to 2 hours. Serve.
