Hello!
Last night all I had on hand were two huge chicken breasts on hand for dinner. I thought I'd share what I did to them. I ended up stuffing them with cheese and basil.
Ingredients:
2 chicken breasts
Basil
Cheese of your choice, (I use cheddar)
Olive Oil
1 Egg
1 cup Flour (depends on your chicken breast size)
1 cup Panko breadcrumbs
Salt and Pepper
To prepare this:
1) Use a knife and make a pocket in the larger end of the chicken breast.
2) Season chicken breast lightly with your choice of seasoning or just use salt and pepper.
3) Stuff chicken with basil and cheese.
4) Seal with toothpick
5) Roll Chicken in flour, then egg, then panko breadcrumbs
6) Place separated on sheet pan and bake for 20 mins @ 375 deg or until golden brown and fully cooked!
> For the breading, I opted to season my flour with paprika, and some maggi powdered seasoning.
> You can most definitely use different stuffings. I just happened to have too much basil from a lasagna cooking spree.
