Sweet-n-Salty Popcorn (aka Kettle Corn)
Makes 2-4 servings*

Ingredients
1/2 cup popcorn kernels
1 TB (approx) peanut oil
3 heaping TB sugar (granulated or superfine)
2 TB butter, melted
Splash of vanilla extract
Salt (table or fine), to taste

Directions
To a heavy-bottomed large lidded saucepan, add the oil and popcorn kernels and set over medium-high to high heat (whatever you’re comfortable with).

Keep an eye on it, and as soon as the kernels start to sizzle, in with the sugar, give it a quick stir, then on with the lid, then swirl and shake the pan, on and off the heat repeatedly to prevent burning, until the popping sound starts to subside to several seconds between pops (this is a judgment thing and you’ll probably burn, under-pop, and over-pop your first few attempts).

Tip about half the popped popcorn out into a very large bowl, quickly sprinkle with salt and toss. Add in the remaining popcorn and do the same again.

Add a splash of vanilla extract to the melted butter, give it a swirl, then pour it over the popped corn. Immediately toss as you would a mixed salad, to evenly distribute the butter.
