Ingredients:
  • 1 cup cooked and mashed sweet potato
  • 2 cups self rising corn meal
  • 1 cup milk
  • 1/2 cup buttermilk
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 1 large beaten egg
  • Cinnamon to taste
  • Gochugaru, optional, to sprinkle on the top


Method:

Combine the dry ingredients and whisk to incorporate. The sweet potato is considered wet.

Combine the wet ingredients and whisk to incorporate.

Mix all of it together and pour into an 8"x8" (20 cm X 20 cm) baking pan. The batter is best left to rest so this is when the oven gets turned on.

Baking:
Preheat the oven to 425°F/220°C. When up to temp bake until toothpick inserted comes out clean. Mine was around 35 minutes. I like a bit of color on top so I broiled it for a couple of minutes.

I have a couple of sweet potatoes waiting on me at home. This looks like a good use of a half of one.

Sounds good. I was looking for recipes for leftover sweet potatoes and found sweet potato biscuits. I was thinking those, ham, and hot pepper jelly.
I’ve made sweet potato biscuits twice now (recipe is on the forum), and they’re a definite hit. I brought a batch down to North Carolina for Thanksgiving and they’re were gone in a flash - one kid ate three just as a snack before the main meal was served.
