Given my recent acquisition of tamarind paste this seemed appropriate with some fresh pork I got from a neighbor.
Ingredients
• 8 oz, small can Coca-Cola
• Dash of liquid smoke
• 1 1/2 oz gold Tequila
• 1 tsp Chipotle powder
• 2 Tbsp chopped cilantro
• 3 cloves minced garlic
• 1 Tbsp fresh minced ginger
• 1 finely chopped habanero, optional
• 1 minced poblano
• 3 minced red jalapeños
• 1 cup of diced tomatoes
• 1/2 cup your brand Hickory Smoke BBQ Sauce
• 2 oz tamarind paste
• 1/3 cup of sugar
Method
Pour your Coca-Cola in the pot and start it boiling to cook down to 1/4 its original volume. Next dice your tomato into 3/4" cubes.
All in the pot and simmer and stir for at least 30 minutes. Might have to add water to keep the volume up so it doesn't blow blobs all over your counter! If the tomatoes aren't cooked down after this then let it cool enough to handle and process mechanically to obtain a homogenous mixture.
There're lots of flavors in this so best to let meld in the fridge for a day before using.
