Texitalian Sausage and Peppers
This is a twist on the classic Italian-American Sausage and Peppers.
Ingredients
1 Package (5) Sweet Italian Sausages
1 large Sweet Onion (I used Texas 1015)
1 Pound Sweet Peppers (sub I each red, yellow and orange bell peppers)
Salt and Black Pepper
Charcoal
Applewood Chunks
Instructions
Set up smoker or grill (BBQ) for indirect cooking/smoking. Get charcoal burning until it starts to ash over.
Slice peppers and onions into bite sized strips.
Add applewood to the charcoal, and put whole Italian sausages on grate away from the coals. Let cook/smoke for 30-40 minutes, until cooked through. Remove to rest.
In a heavy pan (I used cast iron), heat some neutral oil over high heat, lower to medium high. Add onions and peppers. Sautée until soft and starting to caramelize.
Slice sausages into one inch pieces, and add to onions and peppers. Allow sausages to warm through.
Serve. Great with some crusty bread!
