I am not Thai, just like the food and been on holiday to Thailand a couple of times.
We already have a thread on curry pastes, so here's the thread on what to do with them, how to use then etc ;)

Kha Gai Soup has to be right up there for me.
I use ‘Thai Taste’ pastes, they seem to be reliable. I’ve never made my own paste but if the difference is as stark as it is with freshly ground spices I’d like to give that a try.
Some don’t have paste in them at all but I much prefer it with.

I think it might be the best hangover cure in the world! 😂

I just hacked my first one together here and it's already heads up above the one I bought. It's not entirely authentic, yet, but if it's a measure of things that can be made I'm all in!
 
Couple of years back in London, I went to a Thai restaurant called Rosa's kitchen. I ordered the som tam (with green papaya). Never one to shirk the chance of eating fresh chiles, I dug into it and almost regretted it. Fiercely hot, but the extraordinary combinations of fish sauce, acidic lime juice, sweetness from palm sugar and the bite from the chiles; just great.
I also remember buying a small tin of green curry paste from the Asian store in Caracas. It said "two portions" on the tin, so I used half. Never got to the end of the meal. I think even my hair was perspiring:eek:
 
Some of the ready made pastes are really good, but making them yourself (at least once) is worth while.
Beware if you buy ready made in Thailand. They blew my head off. Man, so hot!

Yes! Her recipes look great. I just had a look at the Thai green curry recipe; 15 green Thai chiles.
I can assure you, because I've got Thai green chiles in the garden, that the green curry recipe must be similar to the tin I (tried to eat) ate. The flavours are extraordinary; an incredible mixture of aromatics and herbs...but incendiary. Don't get me wrong; I love it, but if you squeal with too much tabasco, then this is quite another level.
 
I'm hoping to pick up some Thai red chili's on my trip to Le Marche Oriental Market this week. I haven't had any of those in 3 1/2 years! 🤞
