Congratulations go to morning glory who won the recipe challenge garlic with a recipe for Braised Shallot and Caramelised Garlic Tart and has chosen Aubergine (Eggplant) as the next challenge ingredient. The deadline for entries is midday (GMT) Tuesday 19th December.

I LOVE aubergine but it is one of the very few things my husband does not like (the other being lasagne! How? I only dislike marmite and jelly(jello) so I don't think we are too fussy as a couple).

I do have an interesting recipe I've done before just once so if I can get an aubergine I will try it again. My veg box arrived today but no aubergine, unfortunately.

In my view, badly cooked aubergine can be exceptionally greasy and almost slimy in texture. Could that be it? As for lasagne, technically that is just a pasta shape (a flat sheet) but I'm assuming he is referring to the dish known as lasagne?
 
Aubergine is a fave veggie of our´s .. We prepare it to replace lasagne sheet pasta, a Puglia récipe: Melanzane di Lecce or Spanish style, sautéed in Evoo or
Ba Ba Ghanuj - Egyptian or Lebanese or Moroccan with Tahine in a Hummus type style ..

Also, Pisto Manchego, Ratatouille Provençal ..

All very healthy ..

My fave is Melazane di Lecce, Puglia and it is more or less an eggplant or augergine Parmigiana .. However, with mozzarella di bufala .. and layered like a lasagne ..

It tends to be a laborious vegetable to work with however, it is heavenly ..

The last ones I got from Riverford had purple and white stripes, but are out of season at the moment. The ones I used for my recipe were standard purple ones from Tesco - yes! They've started stocking them again.:D

Hey, what are you implying about my aubergine-cooking abilities :ninja: :)wink:)

Aubergine is like squid and okra in my book as something that is lovely when done right, but awful when cooked badly. I can cook good squid (my mother in law was Portuguese so I was taught well) and pretty good aubergine, but certainly need to experiment more on okra.

I've cooked aubergine by roasting cubes before and made it horribly oily, but I've made nice baba ganoush, ratatouille, curry, pickle/chutney, grilling slices (with falafel in pitta), etc. but he has never liked aubergine, even when cooked well by others.

Yes, the dish, but he is not a fan of pasta in general (which is good as he was diagnosed coeliac about five years ago) and as I can not eat dairy, I am pleased not to have to experiment with gluten and dairy-free lasagne!!
