Recipe Tofu salad sandwich

This is a very simple recipe for when you’re looking for a sandwich filling, but don’t want to use meat. The flavour is slightly reminiscent of egg salad. Adapted from Rainbow Plant Life.

Ingredients:

1/2 block tofu
3 tbsp hummus
1 tbsp lemon juice
1 tsp dijon mustard
Salt & pepper to taste
1 dill pickle, chopped fine

4 slices sandwich bread (whatever kind you like)
Sandwich toppings - lettuce, tomato, cucumber, sprouts, etc. (optional) (I used arugula and carrot ribbons)

Method:

Pat tofu dry with paper towels. Wrap in a clean dish towel, place something heavy on top (like a big book or cast iron skillet), and let sit 20 min. Drain.

Chop your tofu up into very small cubes. In a bowl, combine hummus, lemon juice, dijon, salt & pepper, and pickle. Add the tofu cubes and gently toss to coat the tofu.

Spread tofu mixture on some bread. Add your sandwich toppings, top with the other slice of bread, and enjoy!

Makes 2 sandwiches.
