Recipe Tomato Pie

Ingredients:
  • 1 prepared pie crust (or make one)
  • 3 to 4 medium tomatoes, sliced thin
  • 2 Tbsp fresh finely chopped basil
  • 1 cup grated mozzarella cheese
  • 1 cup grated sharp cheddar cheese
  • 1 cup Kraft mayo (or make it)
  • 1/2 tsp red pepper

Process:
Brush bottom of pie crust lightly with butter and prick everywhere with a fork and then bake at 400°F/205°C for 5 minutes. Weight it down so it doesn't bubble, bakers chain, beans, etc.

Take it out of the oven and place the tomato slices in the bottom and then sprinkle with the basil. Mix your cheeses, mayo, and pepper together well and pat on top of the tomato and basil.

Bake at 400°F/205°C 15 to 20 min, or until cheese is at your preferred melty/brown/gewy stage.

I follow one that is similar. Only difference, I pre bake the pie crust with finely shredded mozz or provolone on the bottom. Also, I add a little grated parm to the mayo..

Looks good, but mayo :stop:

I think it would work with cream cheese, sour cream or thick yoghurt as well :)
Look at the mayo as an aioli! :D

But I think I would preferably use 1 of your alternatives.

This makes me want to make our caprese galattes. Too bad I don't have an Everglades tomato plant growing. I need to get 1 started.
