5 days ago I started a brine for the first time. It was a recipe on YouTube :

PICKLING SPICE

dried chiles de árbol

1-inch piece fresh ginger, peeled, coarsely chopped

3-inch cinnamon stick

cardamom pods

dried bay leaves

tablespoons whole peppercorns

tablespoons coriander seeds

tablespoons mustard seeds

tablespoon allspice berries
1
tablespoon juniper berries
1
teaspoon whole cloves
BRINE AND BRISKET

14.9-ounce can Guinness draught
½
cup (packed) light brown sugar
5
teaspoons pink curing salt
2½
cups kosher salt, plus more
1
5–6 pound untrimmed flat-cut beef brisket

I followed the recipe. Had to add some more water (1/4-1/2 liter)to cover the meat as the container was not the right size
5 days later I checked and cut the meat and doesn’t look like it was brined at all
Any help would be appreciated to know what to do. Thanks!
