- 500 g, ground beef
- 1 tsp baking soda
- 2 tsp lemon juice
- ¼ cup water
- 1 small onion (pulp only)
- ½ cup bread crumbs
- 1 tsp salt
- ½ tsp cumin
- ½ smoked paprika
- In a small cup add the baking soda
- Squeeze the lemon to a tsp and mix with the baking soda until it dissolves
- Add ½ cup water and mix
- Add the mixture into the ground beef
- Knead for 5-10 minutes until incorporated and the ground beef is smooth
- Add the salt, cumin and smoked paprika and mix while kneading it
- Add the bread crumbs and continue kneading
- Cover and let it rest overnight
- Grate the onion and get rid of the juice, keep the pulp only
- Mix the pulp of the onion with the ground beef and knead for 2-3 minutes
- Make small meatballs in the shape of small discs and or cylinders
- Grill on stovetop or preferably over charcoal fire for 1-2 minutes each side
- Flip over to prevent burning while grilling
- Serve with grilled chilies and tomatoes
