Turkish Kilis Tava - Oven Baked Kebab

Ingredients:

- 500 g lamb (preferably loin or flank, medium fat content)
- 1 eggplant
- 4 green chilies (2 for garnish)
- 2 red chilies or sweet paprika pepper
- 1 head of fresh garlic
- Parsley (1/2 cup, chopped)
- 2 tsp salt
- 2 tsp chili flakes
- 1 tsp black pepper
- 2 tomatoes (garnish)
- 1 onion (garnish)
- Peel the skins of the eggplant and slice into thin strips
- Prepare a small bowl with salty water
- Soak eggplants in salty water and set aside
- Finely chop 2 green chilies, 2 paprikas
- Add fresh garlic, parsley and continue chopping until all ingredients are mixed
- Cut the lamb into smaller pieces and mince with a cleaver or big knife
- Mix the chopped vegetables with the minced lamb
- Season with salt, chili flakes and black pepper
- Continue chopping and mixing until the mixture is homogenous
- Pat dry the eggplants and layer on an oven tray
- Cover the eggplants with the kebab mixture so that the tray is almost covered with meat
- Score the minced meat with a knife, similar to pizza slices
- Roughly slice 2 tomatoes, 2 chilies and 1 onion for garnish
- Bake the kebab in the oven at 200°C / 390°F until the kebab is cooked but still juicy inside
- Serve with the tray or as kebab slices
