Turmeric Paste
I make this from fresh rhizomes as opposed to buying the processed supplements. If you've no access to the rhizomes or the tools needed for this endeavor you can get the supplements instead.
Equipment Needed
Pressure cooker
Blender with food chop or pulverize
Ingredients
6 oz. fresh turmeric rhizomes
1 cup of water
1/2 cup ethyl alcohol. 140 proof or higher
3 twists fresh ground pepper corns
1/2 stick, 2 oz. margarine
Method
Freeze your rhizomes overnight. The expanding ice crystals will break up the cell walls enabling a better availability of the curcuminoids for extraction.
Slice your rhizomes into about 1/8" thick disc's and then add all to the pressure cooker.
Pressure cook for 20 minutes.
Natural pressure release since there's compressed alcohol vapors in the pot. Since the pressure cooker is a closed system boil out the alcohol. Takes about 5 or 6 minutes.
When cool add to the blender.
Process until smooth.
Keep in the 'fridge and let rest overnight to be thick, or firm. The blob on the end of the butter knife is right about a gram and that's what I'll take in the morning and occasionally in the evening. Tastes like just wash it down and don't think...
