Often overlooked as an ingredient in curry, fish is perfect for a fast dish and works incredibly well with curry spices. Choose a firm fleshed fish such as cod loin, halibut, pollock or monkfish. Here is a lovely recipe using halibut from Gordon Ramsay (as mentioned by @medtran49 elsewhere). You might get dizzy watching it though!
