Recipe Vadouvan Curry Powder

I came across this curry powder for the first time yesterday. It's not a hot curry powder, but it is very good. As always recipes vary and 2 of the key ingredients are omitted by a number of sites because they 'don't like them'. Those being onion powder and garlic powder.

One thing everyone says is that you need to cook the spice blend in oil to bring out the flavour when using it.

Ingredients
1 teaspoon fenugreek seeds
2 tsp cumin seeds
1 tbsp coriander seeds
1 tsp ground turmeric
2 green cardamom pods
20ish fresh curry leaves (dried can be used)
1 tbsp brown mustard seeds
2 tsp dried chilli flakes
½ tsp black peppercorns
1 tbsp onion powder
2 tsp garlic powder

Method
Warm a dry pan up on the stove over a medium heat. When warmed, add the spices and roast until fragrant being careful not to burn them.

Remove from heat and remove from the saucepan to cool before either grinding by hand or in a spice blender.
