No self respecting bakery in Australia doesn't sell these. Affectionately known as "snot blocks".
Ingredients
2 sheets puff pastry
3/4 cup cornflour
3/4 cup custard powder
1 cup castor sugar
500mls milk
500mls cream
4 egg yolks
1/2 tsp vanilla essence
2 cups icing sugar
1/4 cup passionfruit pulp
1 tsp soft butter
Method
Prick pastry sheets all over and bake in 220 degree preheated oven on greased baking paper for 10 minutes or till starting to brown. Remove, flatten a little gently with fork, and allow to cool.
Make custard on stovetop by combining cornflour, custard powder, and sugar...then adding milk a bit at a time. Add cream and stir until custard thickens. Remove from heat, and stir in egg yolks one at a time along with vanilla.
Assemble slice by placing one of the pastry sheets (cooked side up) in an appropriate sized square cake tin. Top with custard and smooth over. Top with remaining pastry sheet.
Make passionfruit icing by combining icing sugar, pulp, and butter till thoroughly mixed. Top slice with a smooth layer of the icing.
Place slice in the fridge for a minimum of 4 hours, but preferably overnight. Slice and serve.
