Watermelon on its own can be a great thirst quencher, and when combined with lime, it is sure to make a lovely refreshing drink, especially now that the summer months will soon be here. This can be made with or without the alcohol. I figured this would be a good one for the Cooking Bites Recipe Challenge.

Ingredients
  • 3 cups cubed seedless watermelon, well chilled
  • 1 1/2 fresh limes, juiced
  • 1/4 cup rum (optional)
  • Sugar (or your favorite sweetener), to taste
  • Fresh mint sprigs for garnish
Method:

Put watermelon chunks and lime juice into a blender. Process on high until smooth. Add sweetener to taste, if needed, and blend again. Pour drink into two glasses over ice. Garnish with fresh mint. Serve.

That looks really delicious Since it will soon be summer and the temperatures tommorrow are really going to feel like it, that sort of thing looks really good to me. I absolutely love watermelon and it is like the perfect summertime treat. I think I will get some the next time I go to the store. I have cantelope right now. A little watermelon would be good.
