Weaving with Bacon

This was supposed to be another avocado challenge recipe, but I’ll detail that over in the challenge topic.

I didn’t take a pic of the completed sandwich, since it didn’t work out, but here are some intermediate pics, anyway:

Tarragon mayonnaise

All of that was to make a deluxe “California” BLT, which in addition to the LT, also featured cucumber, broccoli sprouts, and avocado (which didn’t work out).

This is the first time I’ve done a bacon weave, and I think it’ll be my standard for BLTs from now on - no balancing strips of bacon on uncooperative fillings, only to have it break apart and shed bits of bacon out of the sandwich. Everything fit perfectly and stayed together wonderfully.

The streaky bacon pieces were all cut to roughly the same size (just halving the whole pack), and then just making a standard weave, exactly like this:

I like that a lot.
Feel like it must have more applications than BLT.

Maybe mini ones for burgers. Or tiny ones as bacon croutons

One of the videos I watched showed making little tiny ones for smaller applications like that. Cute (and tasty)!

Drape weaved bacon over upside down cupcake/muffin cups. After cooking, use to serve salad in.

I've not seen that but I can imagine it's good.

You make a fatty or Cajun Hog Log, as Craig calls his, using a bacon weave to hold it together. I've also seen meatloaf wrapped in a bacon weave, individual and full size.
