For some reason I just can't get this right! Too salty again, came out really dark and the meat was breaking up.
Are you following a specific recipe?
Yes, from the Hamlyn All Colour Cookbook. I think it might be just the oven temp. It's an old book and doesn't do fan oven temps. I did reduce it but maybe I need to drop it a tad further.
