Lime infused possets with whisky, based on the famous cocktail. Fairly easy to make and very easy to eat.

Ingredients (makes 2 medium ramekins)
300 ml double cream
75g sugar
2 or 3 fresh or frozen lime leaves or a few pieces of dried lime peel
Juice and zest of a half lime
25 ml whisky
  1. Place the cream in a pan and add the sugar.
  2. Heat slowly stirring to dissolve the sugar.
  3. Add the lime leaves or peel, bring to the boil and let bubble for 3 mins.
  4. Remove from heat and add lime zest, juice and whisky, stirring to incorporate.
  5. Cool for 5 mins and then strain the mixture.
  6. Pour into ramekins and leave to set in the fridge for 3 hours.
