Yam Egg Noodle Turkey Soup:
Ingredients:
1) Yam, medium - 1/2 divided
2) Eggs - 2
3) Flour - 2 cups
4) Half n half - 1/2 cup
5) Butter - 2 tblspns.
6) Turkey breast - 2 to 3 Oz.
7) Turkey broth - 1-1/2 cup
8) Mixed vegetables - 1/8 cup
9) Onion - 1 thick slice
10) Marjoram - 1 tspn.
11) Thyme - 1 tspn.
12) Rosemary - 1 tspn.
13) Sage - a pinch
14) Water - as required
Procedure:
1) Ensure the butter is soft before beginning.
2) Boil 1/4 of a medium yam to soften it up.
3) Cut the boiled yam into two equal pieces.
4) Blend the butte and boiled yam and set aside.
5) Cut up the other 1/4 Yam into pieces and set aside.
-- Egg Noodles --
6) In a mixing bowl, combine flour, eggs, half n half and yam butter.
7) Mix to form the primary dough and then, knead the dough.
8) Flour the kneaded dough ball and a rolling surface.
9) Roll the dough out to about 1/8 to 1/4" thickness.
10) Cut the dough into strips, about 6/8" wide, 10" long.
-- Soup --
11) Dice the turkey breast into 1/4 to 1/2" pieces.
12) Julienne cut or dice up the onion.
13) Combine in a pot, broth, water and turkey.
14) Cook starting at 230F.
15) Add yam and onion.
16) Boil at 230F until yam pieces become softened.
17) Add onion and vegetables and cook till onions soften.
18) Add noodles after 5 minutes.
19) Lower the heat to 175F and simmer the soup for 10 minutes.
NOTE: Add more water to thin the soup, if desired.
20) Ladle into soup bowls and serve.
