For other sauce options you can use black bean sauce or yellow bean sauce.
You could also throw in 1 tbsp of XO sauce or Sichaun Fermented chilli beans at the start too if you wanted some kick.

- 2 Tbsp dried shrimp soaked for half an hour, discard water
- 3-5 slices ginger
- 2 cloves garlic sliced
- 1 medium spring onion/scallion sliced
- 1/2 of that Napa cabbage, chopped
- crisp fried onions to garnish
- Sauce:
- 1 tbsp oyster sauce
- 1 tbsp light soy
METHOD
- Heat a wok on high with 2 tbsp oil, chuck in the prawns, ginger, garlic and stir fry for about 30 seconds
- Toss in the scallions, fry another 30 seconds
- add in the cabbage and stir it around a bit to get oil over it, fry about a minute to wilt it
- throw in the oyster sauce and light soy and stir fry another 1-2 mins or so
- transfer to a plate and garnish
