Vegan Eggnog
I looked for traditional eggnog recipes online and bumped into an intriguing vegan one with sweetness/fructose only from dried dates. (Simple Dairy-Free, Egg-Free Eggnog {Raw, Vegan, Paleo} (unconventionalbaker.com < Link). I bought the ingredients and made it today. Super easy - no fuss with the eggs or their possible curdling. I made slight modifications and added extra spices. The vegan ”eggnog” was delicious: we’re going to drink this at Christmas – non-alc, probably. You can add e.g. rum or whisky/-ey if you like.
Instructions
Keep the cashews in very hot (nearly boiling) water for 10 minutes and drain. Mix all ingredients in a blender until silky. Dilute with extra almond milk, if needed. Warm in the microwave or drink cold. Garnish with sprinkled nutmeg.

250 ml (160 g) cashew nuts
400-450 ml (400-450 g) unsweetened almond milk/almond drink
5-6 pitted dates
1/4 teaspoon nutmeg + 1/4 teaspoon for garnish
1/4 teaspoon bitter orange
1/8 teaspoon ground cloves
1/8 teaspoon cinnamon
1/8 teaspoon salt
