Dill Pickle Relish Deviled Eggs
12 Deviled Eggs (halves)
Ingredients:
6 hard boiled Eggs, cooled & peeled
2-3 Tbsp. Mayonnaise
1-2 tsp. Dill Pickle Relish
½ tsp. Dried Dill Weed (or 1 tsp. of fresh Dill Weed)
S & P to taste
Optional - ground Cayenne Pepper to taste
Method:
Slice the Eggs in half from pole-to-pole
Pop out the cooked yolks to a small bowl, being careful not to tear the cooked Egg Whites
Arrange the now empty cooked Egg Whites to a serving platter; set aside
Using a fork, smash the Yolks in the bowl
Add into the bowl the lesser amounts of Mayonnaise and Relish, then the Dill Weed (you can always add more)
Combine thoroughly
Taste for texture, add more Mayo and/or Relish to taste and mix some more
Add in the S&P to taste
Fill the Egg Whites with the Yolk Mixture as evenly as possible, however you like, with a spoon, a piping bag - the sky's the limit
Cover and chill until you’re ready to serve
