cheese
Cheese is a dairy product, derived from the milk. Rennet is added causing casein to coagulate and the solids collected to be pressed into the finished cheese
Cheese is a dairy product, derived from milk and produced in wide ranges of flavors, textures and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, the milk is usually acidified and the enzymes of either rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout. Over a thousand types of cheese exist. Their styles, textures and flavours depend on the origin of the milk (including the animal's diet), whether they have been pasteurised, the butterfat content, the bacteria and mold, the processing, and how long they have been aged for. Vegetarian alternatives to rennet are available; most are produced by fermentation of the fungus Mucor miehei, but others have been extracted from various species of the Cynara thistle family.

This is a kicked up version of my wife's excellent veggie and ricotta lasagna. I have replaced most of the veggies with a meat sauce and added some cheese varieties and other flavor notes. If you prefer ground beef then use it. We use pork because of an intolerance to beef on my wife's part...

Ingredients:
1 cup dry pasta (I usually use fusilli or whatever I’ve got on hand)
2 tbsp nutritional...
I'm making a rice chicken & cheese casserole MY WAY. Only, instead of broccoli, I'm using green peas. The store ran out of broccoli & I was wondering what to use in place of it, so I thought about using green peas in it. This is not a copy of anyone else's recipe. I thought of this myself so...
KCBC used to be a solid everyday cheddar, good enough to win a taste-off on America’s Test Kitchen back in the day. Commonly sold in 8-ounce sticks for $3 to $5, it was firm in texture and a bit snappy (if hardly sharp) and a favorite of the person in my family who binges on cheddar.
And so...

I obtained some decent size spuds (c. 350 gms each) from the market last week. I stuffed two of them viz:

Allow to cool slightly then carefully...
I bought these two cute little Cuisinart cheese melters from Amazon. I gave one to a friend & kept the other one. But after that, I found out that any skillet with a tight-fitting lid is sufficient enough to do the job anyway. But I like the cheese to be slightly melted on my burger!! Oh well...
I followed a recipe and did it by the letter, the ingredients, the temperature, the rennet, everything and it came out crumbly. I don't understand why.
Pasta de guayaba or guava is a favorite treat everywhere in Latin America. The guayaba is a tropical fruit about the size of an avocado but is red and sweet inside. It pairs well with cheese and Latins love to stack a slice of cream cheese on a slice of guava paste and eat it as a treat. This...
After discussing American cheeses, I though Europe deserved some chatter. My favorite snack cheese is Wensleydale; my favorite melting cheese is Gruyere and my favorite seasoning cheese is Parmigiano. That covers the UK, Switzerland and Italy. What are your favorites?
