milk

Milk is a nutrient-rich, white liquid food produced by the mammary glands of mammals. It is the primary source of nutrition for infant mammals (including humans who are breastfed) before they are able to digest other types of food. Early-lactation milk contains colostrum, which carries the mother's antibodies to its young and can reduce the risk of many diseases. It contains many other nutrients including protein and lactose. Interspecies consumption of milk is not uncommon, particularly among humans, many of whom consume the milk of other mammals. As an agricultural product, milk, also called dairy milk, is extracted from farm animals during or soon after pregnancy. Dairy farms produced about 730 million tonnes of milk in 2011, from 260 million dairy cows. India is the world's largest producer of milk, and is the leading exporter of skimmed milk powder, yet it exports few other milk products. The ever increasing rise in domestic demand for dairy products and a large demand-supply gap could lead to India being a net importer of dairy products in the future. New Zealand, Germany and the Netherlands are the largest exporters of milk products. China and Russia were the world's largest importers of milk and milk products until 2016 when both countries became self-sufficient, contributing to a worldwide glut of milk.Throughout the world, more than six billion people consume milk and milk products. Over 750 million people live in dairy farming households.

Recipe Japanese Dairy Free Milk Pudding

So not having been able to find the ingredients I needed for the milk pudding I had planned to do, I thought I might search out another recipe and low and behold I also can't locate all of the ingredients for it either! But I rather like the looks and simplicity of this traditionally dairy free...

    Recipe Vegan Milk Pudding

I went looking for a recipe to try for the milk/cream CookingBites ingredient challenge. I thought to myself that someone somewhere must have a milk pudding recipe, straight and simple. And they do. The Canadians have one. So I'm going to make it dairy free (for obvious reasons) and because...

    Recipe Croque Monsieur

I used Amish Milk bread to make this open-faced sandwich the last time we had this. I'm making that again today with some changes and hopefully it will come out correctly this time as the dough had a different feel to it than the 2 previous times I made it. BTW, this is definitely a knife and...

    Recipe Light Caramel Sauce

Despite my best efforts to shave off some calories, this is still not exactly a health food. I've been using Stevia as a sugar substitute in a lot of things lately, but there's no way that would work here (the brown sugar needs to be converted, and Stevia doesn't have the characteristics...

Recipe Steamed Banana Cake (Bánh Chuối Hấp)

I saw Andrew Zimmern enjoy these in Saigon on his Bizarre Foods show. These are not nearly as bizarre as some of the things he's enjoyed. But, the process of making them was challenging because - as the name says - it involves steaming them. I have a small steamer that I've used for vegetables...

    Recipe 4 milk cake

ETA: Finally got the picture up obviously. I like this version better than the tres leches. You can't really even tell there is coconut milk in there with just the 1/4 cup, but between that and the brown sugar and the amaretto, it's just a richer tasting cake to me. Picture to come later...

    Recipe Milk Bread

This came about because I had some evaporated milk left over from another project. There are quite a few recipes like this - but I just improvised, writing down measures as I went. The result is a soft brioche like bread - though not as sweet as brioche. The deep yellow yolks of the Black Farmer...

Recipe Tres Leches (3 milks) cake

Technically, there are 4 milks in this cake, but the 3 milks comes from the mixture of sweetened condensed milk, evaporated milk, and cream (or half and half) that you pour over the cake after it is baked. There is a debate over where exactly this cake originated, but it is agreed that it came...

    Raw Milk

Last week I finally got round to calling in at a local farm that has started selling raw milk at the farm gate.
