tahini

Tahini or tahina is a condiment made from toasted ground hulled sesame. It is served by itself (as a dip) or as a major ingredient in hummus, baba ghanoush, and halva.
Tahini is used in the cuisines of the Eastern Mediterranean, the South Caucasus, and the Middle East, as well as parts of North Africa. It is also used in Chinese and Southeast Asian cuisine.Plain, unprocessed sesame paste with no added ingredients is sometimes known as raw tahini.

Recipe Tahinove Hatz - my cheats version of Armenian tahini bread

I make a batch of pizza dough roll or pull it out to about half the thickness needed for pizza. Smear the Tahini over the dough, roll like a swiss roll. Shape it like a coiled rope and bake. Purist Armenian cooks would brand me as a heretic if they read this. After you have smeared let your...

    Recipe Tahin Pekmez

This hardly warrants a recipe, but for completeness I've added one. Ingredients 2-3 tbsp tahini (hulled or unhulled work equally well) 1-3 tbsp grape molasses (traditionally grape molasses is used but any other molasses could be used provided it is sweet, so not pomegranate molasses)...

    Recipe Baba Ganoush

We used to have a gas cooker (rings and oven) which made this slightly easier, but now only have electric. There are still ways around the issues for charring the aubergines, you just have to get creative. You can use a blow torch, you can use a barbeque, you can use a camping stove, or you...

    Recipe Homemade Tahini

With experimentation, I have established that if you are after a really smooth tahini, you need to be using white sesame seeds. Unhulled, brown sesame seeds will give you a slightly grainer, more bitter tahini as will black sesame seeds (obviously these will give you a black tahini). So bare...

Recipe Sesame Meatball with Jicama Shoestring Fries and Tahini Lemon Sauce

I decided to make this a riff on a birds egg in a nest, and I almost called it something like "Sesame Egg in a Nest", but there would have been a lot of confusion about what the dish actually was. You can certainly sub in potato or some similar if you can't get jicama. Jicama Fries Ingredients...

    Homemade Hummus and Tahini

I haven't made this yet, but I love hummus, and have always wanted to try making it. I'm not sure if I'll make the tahini homemade or buy it when I do get around to making this. Hummus is sometimes expensive where I live, so making my own will be another way to save money, plus it's sure to...

    Chickpea Salad with Tahini

I finally tried a recipe I pinned a while back for chickpea salad with cucumbers and tomato. I had a large can of chickpeas (AKA garbanzo beans) and a jar of tahini that needed to be used. I only had one lemon (needed juice from two) and I was out of olive oil, so I had to improvise a bit. I...
