Hi, now that the turkey is gone there is some leftover Turkey grease that resembles gellatin. Anything useful I can do with this cooking wise?

we are both tired of cooking a huge meal for thanksgiving so instead the wife wants me to smoke a lot of meat for the freezer so instead of smoking a turkey i'll be smoking 1 boston butt ( for pulled pork ) 2 smoked chickens and 1 slab of spare ribs and 1 slab of baby back ribs
