You can marinate the tofu cubes in soy sauce or in a mixed sauce that could be paired with the spinach. I could imagine a sauce with honey, salt, pepper, and a small pinch of tabasco.
So you´re thinking of tofu as the "stand-out ingredient"? I don´t think that´s going to happen. Tofu might provide texture, or protein, but "rock your socks!" flavour - no way. I personally qualify tofu in the same category as polenta and ricotta. They don´t really taste of much, but they can certainly add something to a dish.
