Does sweetness work with fish? Not if you want to wind up with a sweet dish. Yes if you use sweetness sparingly to contribute to the flavor of the other ingredients. This recipe is quick and easy and provides a restaurant quality result. I posted a fish recipe in the past that used maple syrup. Here I use honey.
Ingredients
8 small Ahi tuna steaks
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp dijon mustard
1 tsp honey
1 tsp ground pepper
Instructions
Place the ingredients in a freeezer bag and marinate for 1 hour. Heat and oil a skillet and sear the ahi steaks for a minute per side, reduce cooking temp and cook to your preference. Plate, drizzle with some of the marinade and enjoy. It is fashionable these days to sear tuna while leaving the interior raw. My wife won't eat raw fish so I seared half the fish without further cooking and I cooked the other half to a slightly pink center. Feeds 4. The dish worked well either way.
