This sandwich is a nice vegan option. Chickpea sandwiches are pretty common vegan options, but this one is mayo-free so if you don’t want to be fussing about trying to find or make vegan mayo, it’s a good choice. Adapted from Rainbow Plant Life.
Ingredients:
Half of a ripe avocado
Zest of one lemon
Juice of 1/2 lemon
1/2 cup cooked chickpeas (I use canned)
Salt and pepper to taste
Pinch of red pepper flakes
2 slices of sandwich bread, whatever kind you like
Sandwich toppings - I used sliced tomatoes and arugula, but you can use whatever you like.
Place the avocado, lemon zest and juice, chickpeas, salt, pepper, and red pepper flakes in a bowl. Using a fork, rough-mash everything together. You don’t want hummus here - aim to still have some whole chickpeas in there.
Spread on bread and top with whatever toppings you’ve got on hand. Enjoy!
