An easy way to jazz up rice. You can use lemon in place of lime but I think lime looks prettier, to contrast with the yellow.
Ingredients (serves 2)
100g basmati rice
220 ml water
1/2 tsp turmeric powder
A pinch of salt
Fresh turmeric root
Zest of 1 lime
40 g butter in small pieces

Method
- Cook the rice with the addition of turmeric and salt, according to your usual method. When cooked stir through the zest of half the lime and half the butter.
- Place in a serving dish and top with the remaining zest and butter. Grate fresh turmeric root over the top.
