Caviar - an acquired taste?

I have eaten, purchased and served fish roe. I can not afford true caviar - premium species roe. I would love to try Beluga/Sturgeon Caviar.

I previously stated that I have eaten premium Russian caviar. I didn't say I paid for it.

I believe it was at a Mercedes Benz product introduction event at a hotel in Palm Springs (when I worked for a car magazine).

Absolutely adore it - but its so expensive that its an occasional treat. I usually use other fish roe. Here lumpfish caviar and I made a fancy parsley foam.
