Maybe David Rosengarten? I loved that show.
 
The recipe looks like a keeper, for one of those days I have ingredients and need inspiration for something new but straightforward.

You can leave something out or add something.
You can also use leftover Spanish or fried rice.
I once used leftover fajitas.
