I like to make what I like to call a "Mini Thanksgiving Dinner", by roasting just half a turkey breast, small amount of stuffing and side dishes.
It is less headaches, far less food to prepare and cleanup is a snap!!
Looks good although I have never acquired the taste for sage and onion stuffing, tried it many times but don't like it so it usually ends up on my husbands plate unless it is self serve then I just don't bother.
