Does anyone know if you can cook mushrooms, leave them to cool, then re-heat the following day in scrambled egg or omelette?
Would like to have for breakfast but don't have the time or brain power to do a lot of prep so looking for something that will reheat ok the next day, mushrooms being a favourite.

I actually did that recently. Read somewhere to boil them in salted water for a couple of minutes, then drain. I stored them in a container with a couple of paper towels to continue absorbing excess moisture and used them, as well as spinach, onions, and roasted/peeled red bell pepper chopped, all cooked in advance and stored separately, plus some grated or finely chopped cheese (did a leftover cheese clean out) so all I had to do was whip up the eggs and cook. We had 3 or 4 meals of breakfast fritattas off the pre-prepared ingredients. Cooked them in the oven, which made it even easier.

Oh, the mushrooms tasted freshly cooked and remained plump doing the above.
