My local veg box had Cheshire new potatoes in this week so I'll have to think of something.

Hot potato and cucumber salad: the cucumber is cooked in with the boiled potatoes. The dressing is yoghurt, olive oil, dill and mustard cooked in a bowl over the top of the potatoes and cucumber. Served hot!

I made this a while back. Potato and Egg salad with dill.
Our kids loved this salad, and we even make it with beetroot added as well.
Dill + potatoes works absolutely beautifully I think, and the eggs just add some lovely texture and flavour.
The dressing is usually mayonnaise, s & p, mustard powder and a pinch of sugar - and abundant dill, of course!

There's always dill in my potato salad, it's kinda a big dill.

Speaking of potato salad, myself & a friend have been invited to a cookout on the 19th of this month to one of my nieces' house. She asked me to make some potato salad & cornbread. She said that she doesn't know how! Come on! Four kids, and you don't know how to make potato salad or cornbread?!! Hey, what's wrong with this picture?!! Anyway, I plan to make it the way that our mom used to make it. Would that be ok?
