Well I just started the Egg. It will be ready for the butt (2-1/4 pound piece) in about 45 min. Then I have a lot of chopping to do for my mise en place.

Don't forget dessert. The County Fair opened this weekend. I want a funnel cake. 
Instead, picking up the ingredients for a knock-off of the famous Donut Man's Strawberry-stuffed donuts - skewered strawberries and donut halves on the grill. Vanilla ice cream on the side.
