Easter 2025

Have gone from feeling a little sad I won't be with the boys cooking up an easter feast tomorrow to be extremely grateful I'm not having to cook up a feast tomorrow 😮‍💨😆
Can't let Easter pass without cooking lamb though so I'm gonna make one of the only meat dishes I enjoy that has fruit in it, Sticky Spiced Lamb and Date Casserole. If I've got enough in the tank after that I'm going to do sweetcorn and coconut soup with sesame chicken but I suspect I'll be spent!

Yeah. I invited daughter, son, his partner and baby Orin to lunch tomorrow. I bought a shoulder of lamb and its going to be slow roasted (obviously). I'm hoping I have the stamina to cook as I'm still in recovery mode. But it should be fairly easy. I'll probably simply stuff slivers of garlic in it and shake a few dried spices over - put some whole unpeeled heads of garlic, onions and lemon slices in the roasting tray plus a bit of water. Minimal preparation... well that's the idea.
 
I made a HUGE mistake today!
I went to the supermarket ... the Friday before a Sunday Holiday is maddening!
The kicker is, I only needed one, yes one, item!
But I came out the other end unscathed

Did the same here only on a Saturday and next Friday is also a public holiday here (ANZAC day), so there's a 3 day working week next week. You can imagine the chaos.

It was mayhem in the supermarkets. We were in the city to check progress on my OH's new wedding ring (after 3 years of it being missing and I have literally taken everything off of every room and gone through every box, drawer, shelf and so on, and can't find it, he's been told to get a new one, plus mine is being adjusted to fit over my arthritic joints), get a few clothes for him and a couple of other things.

Neither of the 2 supermarkets we went into were well stocked and if you wanted eggs, forget it unless they were chocolate. There was 1 box of broken eggs between 2 supermarkets. Not kidding. And someone was trying to find a member of staff to see if he could buy the 6 that were not broken... :headshake:utter chaos and every single checkout was open and the queues were 3 deep.

We were glad to be able to retire to the countryside and a sheep farm with a cockerel who has yet to work out that it isn't dawn 24/7.

Wedding rings - I’d lost mine several years ago, gave it a few months of looking around, finally ordered a new one (for $39 from Amazon :laugh: ), and the day the new one arrived, I found my original one…under the couch and perched very nice on a bit of the wooden frame, like a little ring fairy had placed it there.

Sounds ideal. So long as you can keep the accompaniments to a minimum. Maybe just a potato side and a veg side?
I dunno, I find when I'm knackered if I go large in volume on just two sides it still looks generous and feels like a feast but is a lot less work.

I found this candy dispensing "Bunny" months ago at the dollar store, I thought it was just cute, but it actually WORKS!!!
He'll be over the moon with his "Easter Basket"
 
Okay, I made one more rookie mistake ...
I was pulling out all that I would need to put together Easter Lunch tomorrow, and went looking for my box of Betty Crocker Cheesy Scalloped Potatoes ...
I found it tucked WAYYYYY in the back of my "C-Store", aka my auxiliary dry pantry out in the finished garage ... IT'S EXPIRED!!!

So off I went to the supermarket in town (about a 20 minute car ride away) and stood in line.
It wasn't quite that bad, I'd say I waited in the self-check line for no more than 5 minutes, not even!
I just had to wiggle my way through the store to get that ONE item, IT WAS PACKED IN THERE!!!
Lesson learned, ensure that I have all ingredients to make a holiday meal at hand LONG before the big day!

DH commented, "can't you just make something else besides those potatoes?"
SURE, but then it's not a holiday meal, it would be an everyday meal - NO BUENO!!!

How expired were they? Dehydrated stuff like that, I’d be really tempted to make it.

They're 6 months past ... when I looked at several different sites, it was unanimously a hard NO - but I was tempted to just make them anyways, but what with my Mom eating this ...
