Easter 2025

Easter monday here too and we are wondering if the shops are open. I think they might be. Semana Santa (Easter) is a week long celebration here but the weeks up and mondays not a bank holiday in Spain so there's a chance.
Yep, Semana Santa has just finished here, as in all Spanish-speaking countries. It runs from 13th April (Palm Sunday) through to 20th April (Easter Sunday) and then it's, supposedly, back to normal. No Easter Monday here, but official holidays are Thursday, Friday and Sunday, so there's very little commerce open from Wednesday until today.

Here they have 'bridging holidays' so if a holiday falls near another holiday they join them up and take a week or a long weekend.

They get 14 public holidays 8 are national holidays and the individual municipalities decide on the rest.
As there are over 8000 municipalities in Spain this generally means no-one has a clue when anythings open, and of course they generally place them one day away from a national holiday so a bridging holiday in-between is allowed. They do like a party 😂

I just finished packing up all of the leftover Honey Baked Ham.
Sent a plate of food home with Mom and got another probably 4-5 more meals for DH & I in the deep freeze.
The Ham Bone I froze as well, I'll get to that later - not sure yet what I'll do with it ...

Yes, I posted it a little while ago. I have edited it probably 5 times LOL and I think I am finally done.

My DH was pretty much hovering and questioning everything I was doing while making it yesterday (which was quite annoying), as apparently he worked as a prep cook as a teenager (50 years ago) in an Italian restaurant that served canneloni, though he never actually made it...and the way I made it was not the same way as they did it there (as he told me several times throughout the process).

Over the years my DH has told me he didn't like canneloni, but after dinner last night, he asked if we could have it again tonight! I told him I am making the cheese and spinach filled one tonight and he looked so sad that I told him I would make him a small tray of the meat filled ones since I had leftover meat mixture. That made him very happy. I don't really feel like rolling out that much pasta dough tonight, but I did make a double batch yesterday (it's wrapped in the frig) so I have more than enough (I had planned on using much of it to cut into spag or fettucine). Ah well.
 
Split pea soup
Yes, I love split pea soup! But I am the only one in my family that does. DH will eat bean soup so next time I get a ham that's what I will do. I will be coming over when the split pea soup is ready, just let me know!
 
msmofet and JAS_OH1 my Mother voted Split Pea & Ham Soup, which DH doesn't care for ... "It's too creamy, ewwww, I don't like that..." please insert the voice of a whiny 10 years old little brat boy saying this, THAT'S how it sounds

Then I suggested Navy Bean & Ham Soup ... "NO! I don't like Beans!"

WHAT? Yes you do!
I think that I'll cut the difference and make Portuguese Bean Soup, we all love that one.
