Favorite method for oven cooked prime rib?

We both love Rib Eye and buy a whole rack and cut it ourselves. Next time I will reserve several ribs attached for prime rib.
I miss Winn Dixie. They were known as the "Beef People". Over the meat department there were 30 windows with a side of beef in each. The beef was aged 30 days before being cut. Seriously good beef.
I remember seeing an episode of Good Eats where Alton Brown discussed methods for aging beef in the fridge.
Braised short ribs are on G's "short list" of favorite foods. I brown the short ribs first then braise in red wine with mushrooms and ginger.
