Favorite salads!

Panzanella is a tasty Italian salad that makes great use of stale bread. There are many recipes for it but easy to improvise.

I like to use stale ciabatta bread, torn up into a large salad bowl then adding either chopped heritage tomatoes (full flavoured) or baby plum tomatoes - mixing it in so the juices absorb into the bread. The basic recipe is then to add olives, vinegar and oil (possibly chopped anchovies) but I also add chopped celery and organic watercress (for flavour and different textures). Instead of fresh tomatoes, sun blushed tomatoes (semi dried) are a great alternative. Often, instead of anchovies, I add some tinned flaked tuna or chopped chorizo. It's flexible - easy to improvise.

Yeah. Bread is an overlooked salad ingredient. Croutons are the well known example of using bread in salad, of course. But left over bread can be the foundation of a salad (as in panzanella). As you say, the bread absorbs the juices of the tomatoes and other ingredients.
