I agree with TR. Browned or frizzy eggs taste burnt to me. When I get eggs at a restaurant I usually get poached. That way they canāt get burned. BUT I like runny yolks and many times I get hard boiled yolks.My preference is to not have any brown on my omelettes (or frizzled edges on my fried eggs), but, hey, itās an egg, Iāll still eat it!
I made an omelet for breakfast today. Three egg diner style with diced ham and cheddar-jack cheese. Black pepper, of course.

That sounds wonderful. I love potato mixed in with eggs.This is one I often make ~ a filling of tender onions and sliced potatoes enclosed in an omelette with crunchy pieces of spicy chorizo mixed in with the egg.

I use them every with way with eggs. I fold them into scrambled eggs, put them inside omelettes, etc.A Spanish tortilla. I love those things.
