We are eating Christmas dinner two nights in a row. We already opened some of our gifts. One day I had dessert for lunch and nothing else, tomorrow I will probably eat cookies for breakfast. That's the beauty of being an adult and having no family around during the holidays, you are free to break from traditions and routines and do whatever the heck you want.
Tonight will be lobster tails with rice pilaf and spinach and shrimp cocktail appetizer, tomorrow will be some sort of fish dish but I haven't gotten that far yet. Maybe a chowder since hubby is still having tooth issues, but any kind of fish is easy to eat as well, so I dunno. I have absolutely stocked my freezer, refrigerator, and pantry so full that we won't need to buy groceries for a month or two except a few small things like fresh veggies or dairy.
We are making chicken cordon bleus for Sunday, actually hubby will be doing the work on that. I bought two large packages of chicken boobies and we will make a bunch of them and freeze all but two. I got some nice Swiss cheese and black forest ham. Hubby makes them really well and also makes a mess really well, so I will be handy as his sous chef and chief bottle washer (and cleaning up the chicken bits splattered about).
