I'm good with 20-30 minutes in most cases, but we knew in advance when we drove down to Peter Lugar's (a steak house in New York City) that we'd be standing there 1.5 hours at minimum. And so it was.
I can wait a bit longer than 30 minutes if we can put our name down and know that if we step away to stretch our legs or drop into a nearby shop our place will be held for us. But it depends. If it is late at night, I don't really want to wait more than 20 minutes. (I know some of you habitually eat dinner at 8 or 9, but at that point my stomach lining is eating itself..
I'm not typically alone when we go to restaurants where one needs to wait - so it's not always my call. (alas). I hate the ones with bars that are standing room only while you wait. I can just "stand" in one spot on the plate and pins in my ankle for about fifteen minutes before I am in pain. Which doesn't immediately go away when seated - ruining the meal for me at the get go.
PS: Was Peter Lugar's any good? Well, okay, we did eat there before I ever had ankle issues so standing to wait wasn't so bad. BUT by the time we got to eat, I was too hungry to notice.
